    • ½ cup mayonnaise (I used Sir Kensington's)
    • ¼ cup capers, drained
    • ¼ cup chopped flat-leaf parsley
    • 3 tablespoons coconut flour
    • ½ teaspoon Celtic sea salt
    • 2 large eggs
    • ¾ cup plantain chips, ground into crumbs
    • 4 tablespoons butter, ghee , or lard
